Sweet, slightly tart and oh so delicious–these Rhubarb Mojitos are a fun springtime spin on a classic!
EEK! The FIRST cocktail in the Lakeside Libations series is LIVE! I am kicking off this series with a seasonal drink (at least here in MN!) Rhubarb Mojitos! My goodness these are so freeeaking good! Slightly sweet, slightly tart, minty, refreshing absolutely perfect! It makes me wish we had a HUGE rhubarb plant on our property…I think I’m going to need to work on that….
They also happen to be super easy to make! Similar to the classic Mojito but I used fresh rhubarb, rhubarb simple syrup and lemon instead of lime! Be sure to let your rhubarb simple syrup cool for a bit (even pop it in the fridge or freezer in a pinch) so that it doesn’t melt your ice!

Rhubarb Mojitos
Ingredients
- 1 cup water
- 1 cup white sugar
- 1 1/2 cups (divided) fresh rhubarb, chopped, plus a stock or two for garnish
- 1/3 lemon
- 4 large mint leaves + a sprig for garnish
- 1.5 oz. white rum (or more depending on your preference 😉
- 1 can soda water
- Ice
Start by making the rhubarb simple syrup. Add the water, sugar and 1 cup of the fresh rhubarb into a medium sized sauce pan. Bring to a boil and let simmer for about 5 minutes. Be sure to keep an eye on it and stir periodically. After 5 minutes strain the sauce and discard the rhubarb. Let the rhubarb simple syrup cool either on your counter or in the fridge/freezer.
When ready to enjoy a cocktail, fill a glass with ice. Add 1/2 cup of fresh rhubarb and 4 mint leaves into a glass. Using a muddler (we love this one!) muddle aka smash the rhubarb and mint. Add in two lemon wedges and muddle those as well. Pour in 1 shot (1.5 oz) of white rum, or to your taste, along with 1 shot (1.5 oz) of the rhubarb simple syrup. Screw on the lid (we love this shaker lid!) and give it a really good shake. Strain it out over the ice. Top with soda water and garnish with a lemon wedge and sprig of fresh mint.
*Note: this recipe makes one cocktail, with quite a bit of rhubarb simple syrup left over. The syrup recipe makes enough for about 5 cocktails. Any leftover rhubarb syrup should be stored in an airtight container in the refrigerator.
