I have been loving this cocktail for years and finally tried it out at home!
This is my take on the Stoli Doli — a signature cocktail at a Twin Cities based restaurant, Redstone. When we lived “down in the cities” I would love to meet up with girlfriends, catch up, sip on Stoli Dolis and devour their Chicken Chopped Salad. I’m literally drooling just writing that! I’m thinking I should probably try my hand at a dupe for that as well!
But, back to this cocktail. Honestly, it doesn’t get much easier since it’s two ingredients– fresh pineapple and high quality vodka. The hardest part is anticipating to enjoy it as the pineapple needs to soak in the vodka for at least two weeks! So plan ahead if you want to have this vodka at the ready for an event or entertaining!
Once it has, all you need to do is strain the vodka, pour it over ice in a shaker (I am obsessed with this mason jar shaker top!) and go to town. Pour it into a martini glass and enjoy! It goes without saying that considering that this martini is pure vodka, enjoy responsibly! These suckers will knock your socks off in multiple ways 😉

Pineapple Martinis
Ingredients:
- 1 fresh pineapple, cut into large chunks
- 4 cups high quality vodka (Titos or Stoli work best!)
Directions:
Add the fresh pineapple into a quart mason jar, cover with vodka. Let this sit at room temperature, not in direct sunlight, for at least two weeks.
After the vodka has infused with the pineapple, strain and pour back into the jar.
To make the Pineapple Martini, pour 4-6 oz. of the vodka over ice into a cocktail shaker (or a mason jar with this attachment). Shake the heck out of it until it is cold and foamy.
Pour into a martini glass and garnish with a pineapple leaf.
