Say hello to the most perfect, cheesy, spicy and crispy wrap–perfect for a quick dinner or a snap to prep ahead of time for weekday lunches for those who WFH!
Apparently this “wrap” style sandwich is a Tik Tok trend–which I would know nothing about but I do know one thing–this thing is hella tasty and easy to make! I cannot wait to adapt it with other flavors! The method is super fun and way easier than it looks!
It starts with super simple ingredients– a large tortilla of your choice, cooked chicken–shredded, sliced, rotisserie, whatever works, my homemade Koetter Sauce aka. souped up buffalo sauce (it’s so dang good!), ranch of your choice (I make a bangin’ semi-homemade version– should I share it!?), cheese and greens! Easy peasy! The secret is how it is cut, folded and cooked!
Start by sectioning your tortilla into 4ths. In one quadrant place your chicken and drizzle with the Koetter Sauce. Next, the greens–spring greens, spinach, romaine or old fashioned ice berg all work here, next a nice slathering of ranch dressing, lastly your shredded cheese. As you can see you will also need to cut a slit between the chicken and the cheese. This is essential so you can fold…
Then you are going to want to pop the whole thing into a slightly oiled pan on the cheese side. Side note: I LOVE our cast iron pans! They give the crispiest crunch to everything and are way easier to maintain than you think! As an added bonus they add iron to our diet–a missing nutrient for so many people!
Once it gets nice and golden-crispy, flip it to the other side to crisp up just a bit as well! Once that’s done it is time to enjoy!
Feel free to serve with additional ranch and Koetter Sauce to your preference! I like mine with a side of crunchy carrots and an apple. Really round it out!
I am telling you–do not sleep on this Koetter Sauce! It plays a huge part in this wrap so don’t just slap on some Frank’s Red Hot Sauce and call it a day! It is also fabulous on grilled chicken, wings and pretty much anything else you put hot sauce on! We make a batch and pop it in the fridge and always use it up quickly! Make it and thank me later 😉
Cheesy Buffalo Chicken Wrap
(makes one wrap–can easily be multiplied)
Ingredients:
- 1 tablespoons olive oil
- 1 large tortilla (I used these)
- 4-6 oz. of chicken (grilled, sliced, rotisserie)
- 2 tablespoons of ranch dressing
- Small handful of green lettuce (spinach, spring mix, romaine all work)
- 1/4 c shredded cheddar cheese
- Koetter Sauce
- 1 cup Franks Red Hot Sauce
- 1/8 cup BBQ sauce (we like this one)
- 1/8 cup honey
- 1 tablespoon dried basil
- 1/2 tablespoon dried parsley
- 1/2 tablespoon paprika
- 2 teaspoons granulated garlic
Directions:
Place the chicken in 1/4 of the tortilla, greens/lettuce next to that, ranch next to that one and lastly the cheese which should end up next to the chicken. Cut a slit 1/2 way through seperating the chicken and cheese. Then carefully fold the chicken portion over the lettuce, folded chicken and lettuce part over to the ranch, then all of it on top of the cheese portion as pictured above.
Preheat a skillet on medium/medium high heat with the oil. Place the wrap cheese-side down and let it get melty and crispy on the outside. Flip over and cook until crisp on that side as well.
Serve with additional ranch and Koetter Sauce.
