This colorful salad is one of my all time favorites, especially while working from home! Incredibly easy to customize based on your preferences and what you have in the fridge!
These are two essentials that make a big difference for the taste– Jimmy’s Cole Slaw Dressing and Sweet Baby Ray’s Teriyaki Marinade! I try my best to make homemade dressings/sauces and well almost everything but sometimes it a. doesn’t turn out how I want and b. store bought is easier! These two are time and flavor savers! If you can find them, I would HIGHLY recommend picking them up!
Cooking the chicken is the most “challenging” part of this recipe–don’t you love that?! I make a big batch of chicken and prep the veggies so that I can eat this salad for lunch every.single.day. No, I’m not kidding! Give it a try and report back–I’d love to hear what you think!
RECIPE:
(Makes 4 large salads–can be easily adjusted for servings and ingredients are an estimate–this is basically the easiest recipe ever!)
- 4 chicken breasts
- 1 cup Sweet Baby Ray’s Teriyaki Dressing and Marinade (+ additional for drizzling)
- 4 cups Romaine lettuce mix
- 4 cups coleslaw (cabbage) mix
- 1 cup shredded carrots
- 2 cups linguine noodles (cooked and chilled)
- 1 cup Jimmy’s Cole Slaw Dressing (divided)
- 1 red pepper cut in slices
- Toasted sesame seeds
Start by preheating your oven to 350.
Place chicken breasts in a shallow baking dish. Pour the teriyaki sauce over the top, flip the chicken breast to coat. Place the cover and bake for 25-30 minutes or until the temperature reads 165 degrees F. Let the chicken rest for 10 minutes or so. This allows the juice to redistribute and stay in the meat, not on your cutting board. #protip
While the chicken rests, assemble your salad. I like to toss the Romaine lettuce and coleslaw mix in the coleslaw dressing. Then plate it on a large plate or bowl. Top with red peppers, carrots and a handful of the chilled noodles.
Slice the chicken breast and place on top of the salad. Drizzle with a bit of the teriyaki sauce to taste and sprinkle with LOTS of toasted sesame seeds.

A few notes:
This salad should be made to order–*if* you have leftovers of dressed salad, toss them, they aren’t good the next day. Portion out the ingredients for each salad for the week if you are having the salad for seperate meals. For a big salad you can surely combine everything at once!
You can absolutely grill your chicken breast after marinating in the teriyaki sauce, if you prefer!
