Spicy, slightly sweet and oh so satisfying! Dare I say the *perfect* salad!?
I know, when you hear salad it’s generally followed by “whomp whomp” in your head or is that just me!? Not this salad–this salad is packed FULL of flavor and is beyond delicious. There are a few steps involved but I promise it is worth it and if you make extra you will have enough for leftovers!
I used our favorite Good Ranchers Fajita Seasoned Chicken Breasts as the protein for this salad and OMG every time I use Good Ranchers chicken I am blown away. It is so incredibly tender, well seasoned and I don’t have to trim them like I normally do! Admittedly, I am a chronic trimmer but with these individually packaged chicken breasts from Good Ranchers I do very minimal trimming! Back to the recipe– I used our Blackstone grill to cook the chicken, peppers and onions but you can absolutely sauté/grill them on the stovetop instead. The dressing is super simple to make, just add in all of the ingredients into a blender–I used our ah-mazing blender that has a smoothie cup attachment which worked so well for this–and give it a quick blend! This dressing is a Chipotle copycat and ohmyword is it freaking GOOD! I could drink it, seriously. I quickly whipped up the lime creama (aka lime juice and sour cream) and then it was assemble time! Like I said, be sure to make/prep extra (keep everything in separate containers!) and you will have an ah-mazing lunch or dinners for the next few days!

Chicken Fajita Salad
Ingredients
- 4 Good Ranchers Fajita Seasoned Chicken Breasts, cut in thin strips
- 1 Yellow or Purple Onion, sliced into 1/2 moons
- 2 Red, Yellow or Orange Bell Peppers, sliced into matchsticks
- A few Tablespoons of Cooking Oil (we use avocado oil), for cooking
- 2 Heads of Romaine Lettuce
- 4 Large Handfuls of Spring Salad Mix
- Honey Chipotle Dressing
- 6 Tablespoons Red Wine Vinegar (I actually used this since I was out–so freaking GOOD!)
- 3 Tablespoons Honey
- 1 Tablespoon Water
- 3/4 Cup Olive or Avocado Oil
- 1/2 Teaspoon Dried Oregano
- 1 1/2 Teaspoon Salt
- 1/2 Teaspoon Black Pepper
- 1 Teaspoon Ground Cumin
- 2-4 Chipotle Peppers in Adobo (I used 4)
- 2 Garlic Cloves, Chopped
- Lime Crema
- 1/2 Cup Sour Cream
- Juice of 3-4 Limes
- Shredded Cheddar Cheese
Start by cooking your chicken after prepping your cooking surface with oil. To cook the chicken, I used a Blackstone grill but you can use an outdoor/stovetop grill or simply cook on your stovetop. While the chicken is cooking, add some oil and the peppers and onions into a skillet/the grill. Give them a nice char but don’t overcook them, you don’t want them mushy.
Make the dressing: Add in all of the ingredients to a blender–we cannot speak highly enough about this blender! I swear it is as good as a Blendtec and I love that it has these smoothie cups for making this dressing and single serve smoothies!
Make the Lime Crema: Whisk sour cream and lime juice until a pourable/drizzable (not a word, I get it) consistency! I like to pour it into a squeeze bottle for pretty presentation 🙂
To assemble the salad– create a layer of Romaine and Spring Mix lettuce at the bottom. Add in the cheese, peppers, onions and chicken. Drizzle with Honey Chipolte Dressing and lime crema. That’s all–time to devour!
Note: I would highly suggest adding fresh or grilled jalapenos as well as cilantro to this salad ooh and corn salsa because, yum! I was just out of those when I made this for the first time!
